Ingredients

  • 1 cup butter, softened
  • 4 eggs
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 cup chopped nuts
  • 1 cup confectioners sugar
  • 2 cups sugar
  • 3 cups flour
  • 1/2 teaspoon baking soda
  • Zest of 1 lemon

Instructions

  1. Cream the butter and sugar until light and fluffy.
  2. Beat in the eggs, one at a time, ensuring each is fully incorporated.
  3. In a separate bowl, sift together the flour, salt, and baking soda.
  4. Alternately add the flour mixture and buttermilk to the egg mixture, starting and ending with the flour mixture.
  5. Stir in the grated lemon zest, lemon juice, and chopped nuts.
  6. Pour the batter into two greased loaf pans.
  7. Bake at 350°F (175°C) for approximately 1 hour, or until a toothpick inserted into the center comes out clean.
