Lemon Nut Bars combine a buttery oat crust with a tangy lemon filling and crunchy nuts, perfect for a sweet, citrusy treat suited for gatherings or afternoon snacks.

Ingredients

  • 1 1/3 cups flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 3/4 cup margarine
  • 1 cup regular or quick oats
  • 1/2 cup nuts, chopped
  • 8 oz cream cheese, softened
  • 1 egg
  • 3 tablespoons lemon juice

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, stir together flour and sugars.
  3. Cut in margarine until mixture resembles coarse crumbs.
  4. Stir in nuts and oats.
  5. Reserve 1 cup of the crumb mixture for topping.
  6. Press the remaining mixture into the bottom of a greased 13 x 9-inch pan.
  7. Bake for 15 minutes.
