Ingredients

  • 14 oz. can sweetened condensed milk
  • 1/2 cup lemon juice
  • 1 teaspoon grated lemon rind (optional)
  • 2/3 cup butter or margarine, softened
  • 1 cup brown sugar
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 cup quick-cooking oatmeal

Instructions

  1. Grease a 9 x 13-inch cake pan.
  2. In a small bowl, stir together sweetened condensed milk and lemon juice until blended. Add lemon rind if desired. Set mixture aside.
  3. In a medium bowl, beat together softened butter and brown sugar until creamy.
  4. In a separate bowl, combine all-purpose flour, baking powder, and quick-cooking oatmeal.
  5. Add the flour mixture to the lemon mixture, stirring until well blended. The mixture will be crumbly.
  6. Spread half of the oat mixture in the prepared pan, pressing down firmly.
  7. Pour the lemon mixture over the oat layer.
  8. Sprinkle the remaining oat mixture evenly over the lemon filling.
  9. Bake at 350°F (175°C) for about 25 minutes, or until edges are golden brown.
  10. Allow to cool on a rack for 15 minutes.
  11. Chill in the refrigerator before cutting into bars.
