Ingredients

  • 1/2 cup candied lemon peel
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 6 tablespoons cold butter or margarine
  • 1 slightly beaten egg
  • 8 ounces lemon yogurt
  • 1/2 teaspoon lemon extract

Instructions

  1. Toss the candied lemon peel with 2 tablespoons of flour to coat.
  2. Combine the remaining dry ingredients: 2 1/2 cups flour, salt, sugar, baking powder, and baking soda.
  3. Cut in the cold butter or margarine until the mixture resembles coarse crumbs.
  4. Add the candied lemon peel, slightly beaten egg, lemon yogurt, and lemon extract to the dry ingredients.
  5. Blend all ingredients together until just combined.
  6. Divide the dough into balls and flatten each into a 1/2 inch thick round.
  7. Place the scones on a baking sheet and sprinkle with sugar if desired.
  8. Bake at 350°F (175°C) until light brown, about 15 minutes.
