Lemon Sours are delightful bars combining a buttery coconut crust with a tangy lemon filling, perfect for citrus lovers and suited for casual gatherings or afternoon treats.

Ingredients

  • 3/4 cup flour
  • 2 eggs
  • 3/4 cup shredded coconut
  • 1/8 teaspoon baking powder
  • 1 teaspoon grated lemon peel
  • 2 tablespoons lemon juice
  • 1/3 cup butter or oleo
  • 1 cup firmly packed brown sugar
  • 1/2 cup chopped nuts
  • 1 teaspoon vanilla

Instructions

  1. Grease a 11 x 7 x 2-inch pan well.
  2. Mix together flour and butter to a fine crumb.
  3. Sprinkle this mixture evenly into the prepared pan.
  4. Bake in a 350°F oven for 10 minutes.
  5. Meanwhile, beat eggs and mix in brown sugar, shredded coconut, chopped nuts, baking powder, and vanilla.
  6. Spread this egg mixture over the partially baked crust.
  7. Return to the oven and bake for an additional 20 minutes.
