Ingredients

  • 1 Tbsp. flour
  • 1 Tbsp. cornmeal
  • 1 1/2 c. sugar
  • 3 eggs
  • 3 Tbsp. margarine
  • 3 Tbsp. milk
  • 1/2 c. lemon juice
  • 1 tsp. lemon rind
  • 1 (9-inch) unbaked pie crust

Instructions

  1. Whisk eggs, sugar, cornmeal, and flour together in a bowl.
  2. Mix melted margarine, milk, lemon juice, and lemon rind in a separate bowl.
  3. Add the wet mixture to the dry ingredients and combine well.
  4. Pour the batter into the unbaked pie crust.
  5. Bake in a 375°F (190°C) oven for 35 to 40 minutes until set and golden.
