Ingredients

  • 3 Tbsp. flour
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 4 skinless chicken breasts
  • 2 Tbsp. olive oil
  • 1 medium onion
  • 1 Tbsp. butter
  • 1 c. chicken broth
  • 3 Tbsp. lemon juice
  • 1/2 tsp. thyme

Instructions

  1. Measure flour, salt, and pepper into a large plastic bag.
  2. Coat the chicken breasts in the bag.
  3. In a large skillet, brown the chicken in olive oil.
  4. Chop the onion; add butter and cook until translucent.
  5. Stir in chicken broth and lemon juice, then cook for 5 minutes.
  6. Place the chicken in a 13 x 9 inch glass dish.
  7. Bake at 350°F for 40 minutes.
  8. Add lemon juice before serving.
