Ingredients

  • 1 C. sugar
  • 2 Tbsp. cornstarch
  • 2 Tbsp. flour
  • 1 C. water
  • 2 egg yolks, beaten
  • 1 Tbsp. margarine or butter
  • 1/2 tsp. grated lemon peel
  • 1/4 C. lemon juice
  • 6 oz. White chocolate
  • 1 (8 oz) pkg. cream cheese, softened
  • 1/2 C. whipping cream

Instructions

  1. In a medium saucepan, combine sugar, cornstarch, and flour; mix well.
  2. Add water to the saucepan and cook over medium heat, stirring constantly until mixture thickens and boils.
  3. Gradually stir a small amount of hot mixture into beaten egg yolks to temper, then return all to the saucepan.
  4. Cook for an additional 2 minutes, stirring constantly.
  5. Remove from heat and stir in margarine or butter, grated lemon peel, lemon juice, and white chocolate until smooth and melted.
  6. Beat softened cream cheese until smooth, then incorporate into the lemon mixture.
  7. In a separate bowl, whip the whipping cream until stiff peaks form.
  8. Gently fold the whipped cream into the lemon-chocolate mixture until well combined.
  9. Pour the filling into a prepared pie crust and chill for at least 4 hours before serving.
