Ingredients

  • 2 cups flour
  • 3 teaspoons baking powder
  • 1 (8 oz) carton low-calorie lemon yogurt
  • 2 tablespoons oil
  • 1 cup frozen blueberries
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 tablespoons skim milk

Instructions

  1. Stir together flour, sugar, baking powder, and salt in a bowl.
  2. In a separate bowl, stir together yogurt, eggs, vanilla, oil, and milk.
  3. Make a well in the dry ingredients; add the liquid ingredients into the well.
  4. Add frozen blueberries (do not thaw) to the batter.
  5. Stir just until blended.
  6. Spoon the batter into 12 to 14 muffin cups that have been sprayed with cooking spray.
  7. Fill 12 cups full for large muffins or spread batter over 14 cups for smaller muffins.
  8. Sprinkle tops with a little sugar, if desired.
  9. Bake in a 425°F oven for about 15 minutes.
