Ingredients

  • 1 1/2 cups raisins
  • 1 3/4 cups brown sugar
  • 1/2 cup vegetable shortening or oil
  • 3/4 teaspoon nutmeg
  • 1 1/4 teaspoons cinnamon
  • 1/2 teaspoon cloves
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 3 to 3 1/2 cups flour

Instructions

  1. In a large saucepan, combine raisins or dried fruit, sugar, shortening, spices, and salt (cloves may be omitted).
  2. Bring to a boil and cook for 3 minutes.
  3. Remove from heat and allow to cool.
  4. Sift flour with baking soda.
  5. Gradually blend the sifted flour into the cooled mixture, mixing thoroughly.
  6. Spread the batter into a well-greased and floured 9 x 13-inch pan.
  7. Bake in a 325°F (160°C) oven for about 1 hour, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan on a rack.
  9. Alternatively, bake in a large 1-inch deep cookie sheet for 45 to 50 minutes.
  10. No icing is needed for this cake.
