Instructions

  1. Saute chopped garlic lightly in olive oil in an 8-quart pot.
  2. Add all ingredients except ditalini to the pot.
  3. Simmer for about 2 hours, until vegetables are tender.
  4. Add water as needed to fill 7 quarts during cooking.
  5. Cook and serve ditalini separately.
  6. Serve the soup with Italian bread.
