Ingredients

  • 2 cups beans
  • 8 cups water
  • 1/2 pound bacon, cut into pieces
  • 1/3 cup packed brown sugar
  • 1/4 cup chili sauce
  • 1 tablespoon chopped onion
  • 1 tablespoon prepared mustard
  • 1 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Wash the beans.
  2. Cover the beans with 4 cups of water and let stand for 2 hours. Drain.
  3. Combine the beans and 4 cups of water in a large pan and simmer, covered, for about 1 hour.
  4. Fry the bacon with chopped onion until bacon is crispy and onion is translucent.
  5. In a bean pot or ovenproof dish, combine the cooked beans with the liquid, bacon, onion, and the rest of the ingredients including bacon grease.
  6. Bake the mixture at 350°F for 2 1/2 to 3 hours until beans are tender.
  7. Stir occasionally, adding water if necessary.
  8. Remove the cover during the last 30 minutes to brown the top; do not stir.
