Ingredients

  • 1 lb. stew meat
  • vegetable cooking spray
  • 1 tsp. vegetable oil
  • 1 c. chopped onion
  • 1 (12 oz.) can light beer
  • 2 bay leaves
  • 1/2 tsp. dried whole thyme
  • 1/2 tsp. ground pepper
  • 1/4 tsp. salt
  • 5 medium carrots, sliced
  • 1/2 lb. mushrooms, sliced
  • 2 tsp. cornstarch
  • 2 Tbsp. water

Instructions

  1. Cut the stew meat into cubes.
  2. Coat a heavy pan with cooking spray and add vegetable oil.
  3. Place the pan over medium-high heat.
  4. Once the oil is hot, add the meat and cook until well browned, turning to cook on all sides.
  5. Reduce heat to medium-low and add chopped onion; cook until tender and lightly browned.
  6. Stir in the light beer, bay leaves, dried thyme, ground pepper, salt, sliced carrots, and sliced mushrooms; bring to a boil.
  7. Cover and reduce heat; simmer for 1 to 1.5 hours.
  8. In a small bowl, combine cornstarch and water until blended.
  9. Stir the cornstarch mixture into the meat and vegetable mixture.
  10. Cook uncovered for 10 minutes, stirring occasionally.
  11. Remove bay leaves before serving.
