- Cut the stew meat into cubes.
- Coat a heavy pan with cooking spray and add vegetable oil.
- Place the pan over medium-high heat.
- Once the oil is hot, add the meat and cook until well browned, turning to cook on all sides.
- Reduce heat to medium-low and add chopped onion; cook until tender and lightly browned.
- Stir in the light beer, bay leaves, dried thyme, ground pepper, salt, sliced carrots, and sliced mushrooms; bring to a boil.
- Cover and reduce heat; simmer for 1 to 1.5 hours.
- In a small bowl, combine cornstarch and water until blended.
- Stir the cornstarch mixture into the meat and vegetable mixture.
- Cook uncovered for 10 minutes, stirring occasionally.
- Remove bay leaves before serving.
