Ingredients

  • 3/4 c. all-purpose flour
  • 1/2 c. cornstarch
  • 1/2 tsp. salt
  • 1/2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 3/4 c. buttermilk
  • 1/4 c. milk
  • 6 Tbsp. vegetable oil
  • 1 egg, separated
  • 1 Tbsp. sugar
  • 1/2 tsp. vanilla extract

Instructions

  1. Preheat oven to 200°F (93°C) and set aside.
  2. In a medium bowl, whisk together 3/4 cup all‑purpose flour, 1/2 cup cornstarch, 1/2 tsp salt, 1/2 tsp baking powder, and 1/4 tsp baking soda.
  3. Measure 3/4 cup buttermilk, 1/4 cup milk, and 6 Tbsp vegetable oil into a 2‑cup measuring cup; add the yolk and set aside.
  4. Whisk the egg white until soft peaks form and fold into the dry mixture, then gradually stir in the wet mixture until just combined.
  5. Heat a non‑stick waffle iron and lightly grease it with oil or spray; pour batter to the desired level and cook until golden and crisp, about 4–5 minutes per waffle.
  6. Serve immediately with your favorite toppings such as fresh fruit, maple syrup, or a dollop of whipped cream.
