Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 1/2 Tbsp. margarine
  • 2 tsp. lemon peel
  • 1 c. chicken broth
  • 1 tsp. dry tarragon
  • 2 Tbsp. lemon juice
  • 2 tsp. flour

Instructions

  1. Melt 1 tablespoon margarine in a skillet.
  2. Add chicken breasts and brown for 3 minutes on each side.
  3. Add chicken broth, lemon peel, tarragon, and lemon juice to the skillet.
  4. Reduce heat, cover, and simmer until the chicken is no longer pink, about 10 to 12 minutes.
  5. Remove chicken to a serving dish.
  6. Melt 1/2 tablespoon margarine in the skillet, stir in flour, and add the juices from the chicken.
  7. Bring to a boil and stir until the sauce thickens.
  8. Pour the sauce over the chicken and serve immediately.
