- Stir the flours together and set aside.
- Combine the molasses, warm water, and active dry yeast.
- Add 8 ounces of the flour mixture to the yeast mixture and stir vigorously for 3 minutes.
- Cover the bowl and set aside to rise until doubled and very bubbly, approximately 1 hour.
- Stir in the nonfat dry milk, crushed caraway seed, kosher salt, and melted unsalted butter into the mixture.
- Gradually add the remaining flour to the mixture.
- When the dough is too stiff to mix by hand, transfer it to a mixer fitted with a dough hook.
- Continue adding flour until the dough is stiff but slightly tacky.
- Knead the dough for 5 minutes on low speed.
