Ingredients

  • 2 extra ripe bananas, peeled
  • 3/4 cup brown sugar, packed
  • 1/2 cup creamy peanut butter
  • 1/4 cup margarine, softened
  • 1 egg
  • 1 1/2 cups old fashioned oats
  • 1 cup all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup raisins

Instructions

  1. Mash the bananas with a fork and measure out one cup.
  2. In a bowl, beat together the brown sugar, peanut butter, and margarine until smooth.
  3. Beat in the egg and mashed bananas until well combined.
  4. In a separate bowl, combine the oats, flour, baking powder, and salt.
  5. Stir the dry ingredients into the banana mixture until well mixed.
  6. Stir in the raisins.
  7. Drop heaping tablespoonfuls of the dough onto a cookie sheet coated with cooking spray.
  8. Shape the cookies with the back of a spoon.
  9. Bake at 375°F (190°C) for 12 to 14 minutes until lightly browned.
