Ingredients

  • 2 cups dried lima beans
  • 1/2 pound pork sausage, cut into 1/2-inch pieces
  • 1 onion, chopped
  • 1/2 green pepper, chopped fine
  • 1/2 cup chopped celery
  • 1 1/4 cups tomato juice
  • 2 tablespoons brown sugar
  • salt
  • 1 teaspoon chili powder
  • 1/8 teaspoon cayenne pepper

Instructions

  1. Soak dried lima beans overnight.
  2. Brown pork sausage in a skillet and remove.
  3. Drain the pot and sauté chopped onion, green pepper, and chopped celery.
  4. Put all ingredients into a pressure cooker and cook for 25 minutes.
  5. Let the pressure drop on its own before opening.
