Ingredients
- 2 cups coarsely chopped broccoli ⓘ
- 1 cup julienne carrot strips

- 2 tablespoons margarine ⓘ
- 1/4 cup coarsely chopped tomato ⓘ
- 12 ounces linguine ⓘ
- 1 (8 oz) carton Egg Beaters
- 1/4 cup grated Parmesan cheese
Instructions
- In a skillet over medium heat, cook and stir broccoli, carrots, onion, Italian seasoning, garlic, and black pepper in margarine for 3 minutes.
- Add tomato and cook for 1 minute or until vegetables are tender-crisp.
- Toss with hot cooked linguine, Egg Beaters, and grated Parmesan cheese.
- Serve immediately.
