Ingredients

  • 2 cups coarsely chopped broccoli
  • 1 cup julienne carrot strips
  • 1/2 cup sliced onion
  • 1 teaspoon Italian seasoning
  • 2 cloves crushed garlic
  • 1/4 teaspoon ground black pepper
  • 2 tablespoons margarine
  • 1/4 cup coarsely chopped tomato
  • 12 ounces linguine
  • 1 (8 oz) carton Egg Beaters
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a skillet over medium heat, cook and stir broccoli, carrots, onion, Italian seasoning, garlic, and black pepper in margarine for 3 minutes.
  2. Add tomato and cook for 1 minute or until vegetables are tender-crisp.
  3. Toss with hot cooked linguine, Egg Beaters, and grated Parmesan cheese.
  4. Serve immediately.
