  • 1 tsp anchovy paste or chopped anchovies
  • 1 tsp capers, rinsed
  • 12 black olives, sliced

  1. Put the oil, onion, garlic, and celery into a heavy saucepan and sauté about 1 minute.
  2. Sprinkle with salt and sugar and sauté for another 3 minutes.
  3. Add chopped or fresh skinned and seeded tomatoes to the saucepan and cook until the sauce thickens slightly, about 10 minutes.
  4. Pour in the white wine and cook for 2-3 minutes.
  5. Add the drained and flaked tuna, anchovy paste or chopped anchovies, capers, and sliced black olives to the sauce.
  6. Cook everything together for another 5 minutes to blend flavors.
  7. Meanwhile, cook the linguine in boiling salted water until al dente, then drain.
  8. Toss the cooked linguine with the sauce and sprinkle with chopped parsley before serving.
