Ingredients

  • 1 lb. linguini
  • 3 Tbsp. butter, divided
  • 2 c. sliced fresh mushrooms
  • 1/2 c. chopped scallions
  • 2 cloves garlic, minced
  • 1 lb. sea or bay scallops
  • 1/2 c. chicken broth
  • 1/2 tsp. thyme
  • 1/2 tsp. pepper
  • 2 Tbsp. flour

Instructions

  1. Cook linguini in boiling water until al dente, then drain and cover to keep hot.
  2. Melt 1 tablespoon of butter in a skillet over medium heat.
  3. Add sliced mushrooms, chopped scallions, and minced garlic; sauté until tender.
  4. Add scallops, chicken broth, thyme, and pepper; cover and simmer for 5 minutes or until scallops are tender.
  5. Stir in remaining butter or parsley as desired before serving.
