Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 2 eggs
  • 1 cup pumpkin
  • 1/2 cup water
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 2/3 cups flour
  • 1/2 cup raisins
  • 1/2 cup walnuts

Instructions

  1. Mix sugar, oil, eggs, pumpkin, and water together in a bowl.
  2. Add all the dry ingredients and stir well until combined.
  3. Stir in raisins and chopped walnuts.
  4. Pour the batter into a greased and floured loaf pan.
  5. Bake at 325°F (163°C) for 1 1/2 hours until a toothpick inserted in the center comes out clean.
