Light and flavorful stuffed potatoes filled with sautéed mushrooms, green onions, and topped with optional cheese or bacon, perfect for a healthy, satisfying meal.

Ingredients

  • 4 medium potatoes (about 1 1/2 lb.)
  • 2 Tbsp. oleo
  • 1/2 lb. sliced fresh mushrooms
  • 1/2 cup chopped green onion
  • 1/4 cup plain low-fat yogurt
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1/4 to 1/2 cup skim milk
  • crumbled bacon (optional)
  • parsley (optional)
  • shredded cheese (optional)

Instructions

  1. Wash the potatoes, dry them, and prick with a fork.
  2. Bake the potatoes in a 425°F oven for 65 minutes or until soft.
  3. While the potatoes are baking, sauté the sliced mushrooms in 2 tablespoons of oleo until tender.
  4. Add chopped green onions to the mushrooms and cook for another 2-3 minutes.
  5. Cut the baked potatoes in half and scoop out the insides into a bowl.
  6. Mix the potato insides with plain low-fat yogurt, salt, pepper, and skim milk to desired consistency.
  7. Stir in the sautéed mushroom and onion mixture.
  8. Spoon the filling back into the potato shells.
  9. Optional: top with crumbled bacon, parsley, and shredded cheese.
  10. Return to oven for a few minutes if you want the cheese melted and toppings heated.
