Lite Mushroom Stuffed Potatoes
Light and flavorful stuffed potatoes filled with sautéed mushrooms, green onions, and topped with optional cheese or bacon, perfect for a healthy, satisfying meal.

Instructions
- Wash the potatoes, dry them, and prick with a fork.
- Bake the potatoes in a 425°F oven for 65 minutes or until soft.
- While the potatoes are baking, sauté the sliced mushrooms in 2 tablespoons of oleo until tender.
- Add chopped green onions to the mushrooms and cook for another 2-3 minutes.
- Cut the baked potatoes in half and scoop out the insides into a bowl.
- Mix the potato insides with plain low-fat yogurt, salt, pepper, and skim milk to desired consistency.
- Stir in the sautéed mushroom and onion mixture.
- Spoon the filling back into the potato shells.
- Optional: top with crumbled bacon, parsley, and shredded cheese.
- Return to oven for a few minutes if you want the cheese melted and toppings heated.
