Ingredients

  • 3 Tbsp. oil
  • 1 onion, chopped
  • 1 lb. lean ground beef
  • 1 lb. spinach, blanched, well drained and chopped
  • salt
  • Tabasco
  • 4 eggs, slightly beaten

Instructions

  1. Heat the oil in a large skillet; add chopped onion and cook over medium heat until soft.
  2. Add the ground beef, mixing with the onion and breaking it up into small bits with a fork.
  3. Cook until the redness is gone and drain excess fat if needed.
  4. Add the chopped spinach and mix well. Stir and cook for 3 to 4 minutes, then season with salt to taste.
  5. Mix a dash of Tabasco with the slightly beaten eggs, then pour over the beef and spinach mixture.
  6. Stir until the eggs are set.
  7. Remove from heat and transfer to a warm platter.
  8. Sprinkle Parmesan cheese over the top.
  9. Sprinkle with rice or noodles before serving.
