Ingredients

  • 2 tsp. shortening
  • 2 tsp. all-purpose flour
  • 1 1/2 lb. ground pork
  • 1/2 lb. ground beef
  • 2 large onions, finely chopped
  • 6 green onions, chopped
  • 1 Tbsp. chopped fresh parsley
  • 1 tsp. salt
  • 1/4 tsp. rubbed sage
  • 1/8 tsp. garlic powder
  • 1/8 tsp. dark or red pepper

Instructions

  1. Combine shortening and flour in a large Dutch oven.
  2. Cook over medium heat, stirring constantly, until roux is caramel colored.
  3. Add pork, beef, onions, parsley, and seasonings; cook over medium heat until meat is browned, stirring to crumble.
  4. Drain and cool.
