Ingredients

  • 1 egg
  • 3/4 c. firmly packed brown sugar
  • 2 egg whites
  • 1/2 c. all-purpose flour
  • 1/4 c. whole wheat flour
  • 1/4 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 c. pitted, chopped dates
  • 1/2 c. chopped pecans
  • 1 tsp. vanilla extract
  • vegetable cooking spray
  • powdered sugar (optional)

Instructions

  1. Combine egg and brown sugar in a large bowl; beat at medium speed until light and fluffy.
  2. Beat egg whites (at room temperature) in a medium bowl at high speed until stiff peaks form.
  3. Fold egg whites into beaten egg mixture.
  4. Combine flour and next 5 ingredients; add to egg mixture, stirring until well blended.
  5. Stir in vanilla.
