Ingredients

  • 2 Tbsp. olive oil
  • 2 Tbsp. all purpose flour
  • 1 medium onion, chopped
  • 1 clove garlic, minced
  • 1 can (28 oz.) tomatoes
  • 1 tsp. sugar
  • 1 Tbsp. Worcestershire sauce
  • salt
  • 1/8 tsp. hot pepper sauce
  • 1 bay leaf
  • 1 pkg. (10 oz) frozen okra sliced
  • 2 pkg. (6 oz) frozen Alaska Snow crab meat, thawed, drained

Instructions

  1. Heat oil in a large kettle over medium heat.
  2. Add flour and stir constantly until dark brown but not burned.
  3. Add chopped onion and minced garlic. Cook until tender, stirring occasionally.
  4. Gradually stir in undrained tomatoes.
  5. Add sugar, Worcestershire sauce, salt, hot pepper sauce, and bay leaf.
  6. Stir to break up the tomatoes.
  7. Bring to a boil.
  8. Reduce heat to low.
  9. Cover and simmer for 10 minutes to blend flavors, stirring occasionally.
  10. Add sliced okra and cook for 5 minutes or until tender, stirring occasionally.
  11. Add crab meat and stir gently to heat through.
  12. Discard bay leaf before serving.
  13. Serve the gumbo over rice.
