Ingredients

  • 1 lb. frozen lobster tails
  • 1 small onion, minced
  • 1/2 cup fresh mushrooms
  • 1 (1 lb.) can creamed corn
  • salt to taste
  • paprika to taste
  • cayenne pepper to taste
  • 1/4 cup butter
  • 1/2 cup minced celery

Instructions

  1. Thaw lobster tails.
  2. With scissors, remove the underside membrane from the lobster tails. Pull out the meat in one piece and cut into crosswise slices.
  3. Heat butter in a large pot and sauté the minced onion, minced celery, and sliced mushrooms until tender but not brown.
  4. Stir in the flour and cook for 1-2 minutes.
  5. Gradually stir in the milk, mixing well to prevent lumps.
  6. Cook over low heat, stirring constantly until the soup thickens slightly.
  7. Add the creamed corn and lobster tail pieces to the soup.
  8. Season with salt, paprika, and cayenne pepper to taste.
  9. Cook over low heat until the lobster pieces are white and opaque.
  10. Serve hot, sprinkling with paprika at the table.
