Lobster Mousse "Cape Cod"
Lobster Mousse
Ingredients
- 1 cup diced lobster meat
- 1/2 cup low-fat or skim milk
- 1 (8 oz.) package cream cheese ⓘ
- 2 cups diced celery ⓘ
- 1 small red onion, diced ⓘ
- 2 cloves garlic, minced ⓘ
- 1 teaspoon Dijon mustard ⓘ
- 1 green pepper, diced ⓘ
- 1 can cream of tomato soup ⓘ
- 2 envelopes unflavored gelatin ⓘ
- salt and pepper to taste ⓘ
- fresh cilantro for garnish
Instructions
- Heat cream cheese and tomato soup until the cheese melts.
- Stir in milk, diced lobster, celery, onion, garlic, green pepper, salt, and pepper.
- Soften gelatin in 1/2 cup cold water.
- Add softened gelatin to the mixture and stir well.
- Pour mixture into a greased mold or dish.
- Refrigerate for at least 4 hours to set.
- Unmold the mousse if desired.
- Serve on a bed of shredded romaine with radishes, carrots, broccoli, and cauliflower around it.
- Garnish with fresh cilantro.
