Ingredients

  • 3 hard-boiled eggs
  • 2 Tbsp. cream
  • 1/2 lb. butter
  • 2 Tbsp. flour
  • 1 cup cream
  • 2 cups lobster
  • 4 Tbsp. sherry

Instructions

  1. Use a double boiler for gentle cooking.
  2. Gradually add cream to finely mashed egg yolks, mixing well.
  3. Melt butter in the double boiler and add flour, stirring to combine.
  4. Gradually add cream, stirring constantly, and heat until just boiling but do not boil.
  5. Add egg yolks and lobster to the mixture.
  6. Keep over hot water until thoroughly heated. Add sherry, salt, and pepper before serving.
