Loretta'S Barbecue Hash
Ingredients
- 3 to 5 lb. beef (inexpensive cut) ⓘ
- 2 c. water reserved from cooking beef ⓘ
- 1 tsp. chili powder ⓘ
- 2 tsp. salt ⓘ
- 1 tsp. pepper ⓘ
- 2 tsp. paprika ⓘ
- 2 1/2 c. catsup ⓘ
- 1/4 c. Worcestershire sauce
- 2 tsp. Tabasco sauce ⓘ
- 1/2 c. brown sugar ⓘ
- 1 c. vinegar ⓘ
- 3 onions, chopped ⓘ
- 2 green peppers, diced ⓘ
- 2 potatoes, peeled and finely diced ⓘ
Instructions
- Cook beef covered with water until tender.
- Save 2 cups of cooking liquid.
- Let meat cool, then grind, shred or chop.
- Place in Dutch oven or heavy pot.
- Add all the other ingredients and cook over low heat until peppers and potatoes are tender, about 35 minutes.
- Serve over rice.
- Good for a crowd or two teenage boys.
