Ingredients

  • 3 to 5 lb. beef (inexpensive cut)
  • 2 c. water reserved from cooking beef
  • 1 tsp. chili powder
  • 2 tsp. salt
  • 1 tsp. pepper
  • 2 tsp. paprika
  • 2 1/2 c. catsup
  • 1/4 c. Worcestershire sauce
  • 2 tsp. Tabasco sauce
  • 1/2 c. brown sugar
  • 1 c. vinegar
  • 3 onions, chopped
  • 2 green peppers, diced
  • 2 potatoes, peeled and finely diced

Instructions

  1. Cook beef covered with water until tender.
  2. Save 2 cups of cooking liquid.
  3. Let meat cool, then grind, shred or chop.
  4. Place in Dutch oven or heavy pot.
  5. Add all the other ingredients and cook over low heat until peppers and potatoes are tender, about 35 minutes.
  6. Serve over rice.
  7. Good for a crowd or two teenage boys.
