Tips & Substitutions

For a richer flavor, consider adding fresh herbs like thyme or bay leaves. You can substitute the ham bones with smoked turkey or chicken for a different taste. If you're short on time, use pre-chopped vegetables or frozen green beans. Remember to taste and adjust the seasoned salt and pepper as needed, enhancing the overall flavor profile of this comforting soup.

Serving Suggestions

Serve this hearty low carb vegetable soup with a side of crusty bread or a simple green salad for a complete meal. It pairs beautifully with the Half Hour Ham Pie for a delightful dinner. For extra texture, top with grated Parmesan cheese or a dollop of sour cream before serving to enhance the flavors.

Storage & Reheating

Store any leftover soup in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stove over medium heat until heated through, stirring occasionally. You can also microwave individual portions, covered, for about 2-3 minutes, stirring halfway through for even heating.
