Ingredients

  • 1/2 cup soy flour
  • 1/4 cup whole-wheat flour
  • 1/2 cup Splenda granular
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup canola oil
  • 2 teaspoons vanilla extract
  • 6 egg whites
  • 1/4 cup unsweetened applesauce
  • 1/4 cup water

Instructions

  1. Preheat oven to 350°F and lightly coat an 8 x 8 baking dish with butter-flavored cooking spray.
  2. In a large mixing bowl, stir together soy flour, whole-wheat flour, Splenda, cocoa powder, baking powder, and salt.
  3. In a medium mixing bowl, combine canola oil, vanilla extract, egg whites, applesauce, and water.
  4. Pour the applesauce mixture into the flour mixture and stir just until well combined.
  5. Pour the batter into the prepared baking dish.
  6. Bake for about 15 minutes or until edges spring back when touched gently; the center will be soft.
