Ranch Style Eggs combine cheesy, spicy flavors with crispy tortillas and savory eggs, perfect for hearty breakfasts or brunches for family and friends.

Ingredients

  • 2 Tbsp. cooking oil
  • 6 (6-inch) tortillas
  • 1/2 c. chopped onion
  • 1 clove garlic
  • 3 large tomatoes, peeled, cored and chopped
  • 1 (4 oz.) can green chilies
  • 1/4 tsp. salt
  • 1 Tbsp. oil
  • 6 eggs
  • 1 c. shredded Monterey Jack cheese

Instructions

  1. In a small skillet, heat 2 tablespoons of oil.
  2. Holding tortillas with tongs, dip each in hot oil until limp, about 10 seconds.
  3. Line a 10 x 6 x 2-inch baking dish with the fried tortillas.
  4. Keep warm until ready to assemble.
