Low Fat Corn Chowder
Ingredients
- 2 cups celery, chopped ⓘ
- 2 cups carrots, chopped ⓘ
- 1 large onion, chopped
- 2 tablespoons olive oil ⓘ
- 1 (16 ounce) bag frozen corn ⓘ
- 2 (15 1/2 ounce) cans cream-style corn ⓘ
- 2 cups low sodium chicken broth ⓘ
- 2 cups 1% low-fat milk ⓘ
- bells seasoning, to taste ⓘ
- pepper, to taste ⓘ
- 1 tablespoon all-purpose flour ⓘ
Instructions
- Saute celery , carrots, onion in olive oil until tender.
- Add frozen corn.
- Add flour to make roux.
- slowly add in chicken stock and milk.
- last add in cans of cream corn and seasonings.
- Let simmer so flavors may meld. 1/2 -1 hours.
- Enjoy.
