Ingredients

  • 12 Tbsp. cocoa powder
  • 4 Tbsp. canola oil
  • 2/3 c. light margarine
  • 2 c. sugar
  • 8 egg whites
  • 1 tsp. mint extract
  • 1 1/4 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 c. chopped nuts (optional)

Instructions

  1. Preheat oven to 350°F.
  2. Spray a 13 x 9 x 2-inch baking pan with cooking spray.
  3. Mix all ingredients and spread the batter evenly in the prepared pan.
  4. Bake for 30 minutes and then let cool.
