Low-Fat Pumpkin Bars

Ingredients

  • 1 c. egg whites or liquid egg substitute
  • 1 1/2 c. sugar
  • 1/2 c. buttermilk
  • 1/4 c. light corn syrup
  • 1/4 c. canola oil
  • 1 (16 oz.) can pumpkin
  • 2 c. unbleached flour
  • 2 tsp. baking powder
  • 2 tsp. pumpkin pie spice
  • 2 tsp. ground cinnamon
  • 1 tsp. baking soda
  • 1 c. raisins (optional)

Instructions

  1. Preheat oven to 350°.
  2. Grease or spray a jellyroll pan. Combine egg whites, sugar, buttermilk, corn syrup, oil and pumpkin in a large mixing bowl.
  3. Combine flour, baking powder, pumpkin pie spice, cinnamon and baking soda in a medium bowl.
  4. Add dry ingredients to pumpkin mixture; stir until just combined.
  5. Add raisins, if using.
