Ingredients

  • 9 lasagne noodles
  • 2 (14.5 oz) cans chopped tomatoes
  • 2 cans mushrooms pieces
  • 1 (8 oz) can tomato sauce
  • 1 tsp basil
  • 1 tsp oregano
  • 1 lb chopped spinach
  • 2 chopped zucchini
  • 5 crushed garlic cloves
  • 1 chopped onion
  • 16 to 24 oz nonfat cottage cheese
  • low-fat or nonfat mozzarella cheese
  • 1/8 cup fresh grated Parmesan cheese

Instructions

  1. Cook lasagne noodles according to package directions.
  2. Saute chopped onion and crushed garlic in a small amount of water until softened.
  3. Add chopped tomatoes (including liquid from one can), tomato sauce, drained mushrooms, basil, oregano, and chopped zucchini to the skillet.
  4. Simmer the sauce slowly for 20 minutes.
  5. Drain spinach between paper towels to remove excess moisture.
  6. In a bowl, combine chopped spinach and nonfat cottage cheese and mix well.
  7. Spray a 9 x 13-inch baking dish with cooking spray (Pam).
  8. Layer sauce, noodles, and the spinach-cottage cheese mixture in the dish.
  9. Repeat the layering until all ingredients are used, ending with a layer of cottage cheese mixture and sauce on top.
