Ingredients

  • 3/4 cup egg substitute
  • 1 cup canola oil
  • 1 1/3 cups sugar
  • 2 teaspoons vanilla
  • 2 cups grated zucchini
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder

Instructions

  1. Mix egg substitute, canola oil, sugar, and vanilla together in a bowl.
  2. Add grated zucchini to the wet mixture and stir well.
  3. Sift together flour, salt, cinnamon, baking soda, and baking powder in a separate bowl.
  4. Add the dry ingredients to the wet mixture and mix until just combined.
  5. If desired, fold in nuts or raisins.
  6. Grease two 8-inch loaf pans with oil or non-stick spray.
  7. Divide the batter evenly between the two pans.
  8. Bake at 325°F (163°C) for about 1 hour or until a toothpick inserted into the center comes out clean.
