- Mix egg substitute, canola oil, sugar, and vanilla together in a bowl.
- Add grated zucchini to the wet mixture and stir well.
- Sift together flour, salt, cinnamon, baking soda, and baking powder in a separate bowl.
- Add the dry ingredients to the wet mixture and mix until just combined.
- If desired, fold in nuts or raisins.
- Grease two 8-inch loaf pans with oil or non-stick spray.
- Divide the batter evenly between the two pans.
- Bake at 325°F (163°C) for about 1 hour or until a toothpick inserted into the center comes out clean.
