Ingredients

  • 1 lb. skinless, boneless chicken breast
  • 2 Tbsp. vegetable oil
  • 1/2 c. flour
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1 Tbsp. butter
  • 1/2 c. chopped celery
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped red pepper
  • 2 Tbsp. brown sugar
  • 1 c. ketchup
  • rice

Instructions

  1. Chop chicken into bite-sized chunks.
  2. Heat vegetable oil in a pan.
  3. Mix flour, salt, and pepper in a bowl.
  4. Dip the chicken pieces in melted butter, then coat with the flour mixture.
  5. Brown the coated chicken in the hot oil.
  6. Mix ketchup, brown sugar, chopped celery, onion, green pepper, and red pepper to create the sauce.
  7. Add the sauce mixture to the browned chicken and simmer for 30 minutes.
  8. Serve the Lucky Chicken over cooked rice and garnish with slices of green and red peppers.
