Ingredients

  • 1 onion, diced
  • 1.5 to 2 lb. ground beef
  • cooking oil
  • 2 c. water
  • 2 Tbsp. chili powder
  • 2 Tbsp. flour
  • 16 oz. can tomato sauce
  • salt and pepper to taste
  • 10 to 12 corn tortillas
  • 1 lb. Cheddar cheese, grated

Instructions

  1. Brown the diced onion and ground beef in oil and set aside.
  2. Combine water and chili powder and set aside.
  3. Heat 3 tablespoons of oil in a pan and add flour, stirring until browned.
  4. Slowly add the chili powder mixture to the flour mixture, stirring until thickened.
  5. Add tomato sauce, salt, and pepper, then simmer for about 5 minutes.
  6. Soften tortillas by dipping in hot oil, then quickly remove and drain.
  7. Place some of the cooked meat in each tortilla, add cheese, and roll them up.
  8. Arrange the rolled tortillas seam side down in a baking dish.
  9. Cover with tomato sauce, remaining meat, cheese, and grated onion.
  10. Bake at 350°F for 30 minutes until bubbly and heated through.
