- Beat eggs on high speed for 5 minutes.
- Beat granulated sugar, lemon juice, and pumpkin until well combined.
- Fold in sifted flour, baking powder, cinnamon, salt, and ginger into the pumpkin mixture.
- Grease and flour a 15 x 10 x 2-inch cookie sheet.
- Pour the batter into the prepared sheet and sprinkle with chopped nuts on top.
- Bake for 15 minutes at 375°F.
- Turn out the baked layer onto a powdered sugar-dusted towel.
- Roll up the hot cake in the towel and let cool for 30 minutes.
- Unroll the cooled cake and spread with your preferred filling, then re-roll.
