Ingredients

  • 3 eggs
  • 1 cup granulated sugar
  • 1 teaspoon lemon juice
  • 2/3 cup pumpkin
  • 3/4 cup sifted flour
  • 1 teaspoon baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1 cup chopped nuts

Instructions

  1. Beat eggs on high speed for 5 minutes.
  2. Beat granulated sugar, lemon juice, and pumpkin until well combined.
  3. Fold in sifted flour, baking powder, cinnamon, salt, and ginger into the pumpkin mixture.
  4. Grease and flour a 15 x 10 x 2-inch cookie sheet.
  5. Pour the batter into the prepared sheet and sprinkle with chopped nuts on top.
  6. Bake for 15 minutes at 375°F.
  7. Turn out the baked layer onto a powdered sugar-dusted towel.
  8. Roll up the hot cake in the towel and let cool for 30 minutes.
  9. Unroll the cooled cake and spread with your preferred filling, then re-roll.
