Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup butter, melted
  • 1 (8 oz.) package cream cheese, softened
  • 2/3 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs, separated
  • 1 cup semi-sweet chocolate chips, melted
  • Pinch of cream of tartar
  • 1/3 cup sugar (for egg whites)
  • 1 cup well chilled whipping cream
  • 1 1/2 cups chopped Macadamia nuts
  • 1 c. well chilled whipping cream

Instructions

  1. Mix graham cracker crumbs and melted butter.
  2. Press the mixture into a 9-inch pie plate to form the crust.
  3. Bake at 350°F for 5 to 7 minutes.
  4. Cool completely before filling.
  5. In a mixing bowl, beat the softened cream cheese, sugar, and vanilla until smooth.
  6. Separate the eggs; beat the egg yolks into the cream cheese mixture.
  7. Melt the semi-sweet chocolate chips and add to the mixture.
  8. In a clean bowl, whip the chilled whipping cream until soft peaks form.
  9. Fold the whipped cream into the chocolate mixture.
  10. In a separate bowl, beat egg whites with a pinch of cream of tartar until soft peaks form, then gradually add sugar and beat until stiff peaks form.
  11. Fold the egg whites into the chocolate mixture gently.
  12. Chop the macadamia nuts and fold into the mousse.
  13. Pour the mousse into the prepared crust and chill for at least 2 hours before serving.
