Ingredients

  • 1/2 cup small macaroni
  • 1 1/2 cups skim milk
  • 1 cup soft bread crumbs
  • 1/4 cup chopped pimentos
  • 3 egg whites
  • 6 oz American shredded cheese
  • 3 beaten egg yolks
  • 2 tbsp chopped onions
  • 1/4 tsp cream of tartar

Instructions

  1. Cook the macaroni until tender, then drain.
  2. Combine milk, shredded cheese, and 1/4 teaspoon salt in a saucepan and heat over low until the cheese melts.
  3. Gradually stir a small amount of the hot cheese mixture into the beaten egg yolks to temper them.
  4. Mix the cooked macaroni with the bread crumbs, chopped pimentos, and chopped onions.
  5. Beat the egg whites with the cream of tartar until stiff peaks form.
  6. Gently fold the macaroni mixture into the beaten egg whites.
  7. Transfer the mixture into a baking dish and bake at 325°F until golden and heated through.
