Mae Regan'S Lemon Bread

Ingredients

  • 6 Tbsp. margarine
  • 1 c. sugar
  • 2 large eggs
  • 1 1/2 c. flour
  • 2 tsp. baking powder
  • 1/2 c. milk
  • 1 lemon (juice and rind)
  • 1/2 c. walnuts, ground fine (optional)

Instructions

  1. Lightly oil a regular loaf pan.
  2. Cream margarine, sugar, and eggs together.
  3. Add dry ingredients alternately with milk and finely grated lemon rind.
  4. Add ground walnuts if using.
  5. Pour batter into the prepared loaf pan.
  6. Bake in a 325°F (163°C) oven for about 25 minutes.
  7. Remove from oven and prick the top of the bread all over with a toothpick.
