Ingredients

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 3 cups sugar
  • 1 cup vegetable oil
  • 4 eggs
  • 2/3 cup water
  • 2 cups pumpkin
  • 1/2 cup chopped or crushed walnuts

Instructions

  1. Sift dry ingredients together and set aside.
  2. In a separate bowl, mix together pumpkin, water, vegetable oil, and eggs.
  3. Pour the wet mixture into the dry ingredients and mix well.
  4. Fold in the chopped or crushed walnuts.
  5. Pour the batter into two greased 9 x 5 x 3-inch loaf pans.
  6. Bake at 350°F (175°C) for 1 hour and 10 minutes, or until a wooden pick inserted in the middle comes out clean.
  7. Cool the bread before removing from pans and wrapping in foil or waxed paper.
