Ingredients

  • 4 to 5 lb. Boston butt or fresh ham
  • 1 large onion
  • 3 Tbsp. brown sugar
  • 3 Tbsp. dry mustard
  • 1/4 tsp. red pepper
  • 1/4 tsp. black pepper
  • 1 c. vinegar
  • 1 1/2 c. water
  • 1/2 c. ketchup
  • 1/2 c. Worcestershire sauce
  • 1 tsp. salt

Instructions

  1. Put the meat in a roaster.
  2. Mix onion, brown sugar, dry mustard, red pepper, black pepper, vinegar, water, ketchup, Worcestershire sauce, and salt.
  3. Pour the sauce mixture over the meat.
  4. Cover the roaster.
  5. Cook in a 325°F (160°C) oven for 5 to 6 hours until the meat is very tender and falls off the bone.
  6. Let the meat and drippings cool completely.
  7. Remove all fat from the cooled meat and sauce.
  8. Chop the meat and reheat it in the sauce before serving.
  9. May be frozen for later use.
