Ingredients

  • 1 c. softened butter or margarine
  • 2 c. sugar
  • 4 large eggs
  • 1 1/2 c. jam (blackberry recommended)
  • 3 c. all-purpose flour
  • 2 tsp. ground allspice
  • 2 tsp. ground cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 c. buttermilk
  • 1 c. dark raisins

Instructions

  1. In a large mixing bowl, beat the softened butter or margarine and sugar until light and fluffy.
  2. Beat in the eggs well, then add the jam.
  3. Sift the dry ingredients (flour, ground allspice, ground cinnamon, baking powder, baking soda) and add alternately with the buttermilk to the mixture, beginning and ending with the dry ingredients. Beat well after each addition.
  4. Stir in the dark raisins and chopped nuts.
  5. Pour the batter into three greased and floured 9-inch cake pans.
  6. Bake at 300°F (150°C) for 40 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool completely on racks before serving.
