Ingredients

  • 4 half chicken breasts
  • 1 can cream of chicken soup
  • 2 cups diced celery
  • 1/2 cup toasted almonds
  • 1/2 teaspoon salt
  • 1 tablespoon minced onion
  • 2 tablespoons lemon juice
  • 1 cup mayonnaise
  • 1 cup shredded Cheddar cheese
  • 1/2 bag crushed potato chips

Instructions

  1. Bake the chicken breasts at 375°F for 45 minutes.
  2. Allow the chicken to cool, then remove the meat and dice it.
  3. In a bowl, mix the cream of chicken soup, diced celery, toasted almonds, salt, minced onion, lemon juice, and mayonnaise.
  4. Add the diced chicken to the mixture and pour into a buttered casserole dish.
  5. In a small bowl, combine crushed potato chips and shredded Cheddar cheese.
  6. Sprinkle the potato chip and cheese mixture evenly over the casserole.
  7. Bake at 375°F for an additional 30 minutes or until bubbly and golden.
