Ingredients

  • 1/4 cup butter
  • 1/2 pound mushrooms, sliced
  • 3 carrots, julienned
  • 2 pint Brussels sprouts, halved

  • 3 (14 oz.) cans chicken broth
  • 1 tablespoon white wine
  • Worcestershire sauce
  • 3 tablespoons flour
  • 2 cups milk
  • 1/8 teaspoon nutmeg
  • 3 tablespoons parsley
  • 1/4 teaspoon pepper
  • 1 teaspoon salt

Instructions

  1. Melt 2 tablespoons butter over medium heat.
  2. Add sliced mushrooms and julienned carrots. Saute for 5 minutes. Transfer vegetables to a bowl.
  3. Melt 2 tablespoons butter. Add halved Brussels sprouts and chopped onion.
  4. Saute for 3 minutes. Stir in chicken broth and Worcestershire sauce.
  5. Simmer for 10 minutes. Set aside 3/4 cup of cooked Brussels sprouts.
  6. Puree the broth mixture in a blender and return to a large Dutch oven.
  7. Gradually add milk to flour, blend, and pour into the soup.
  8. Add mushroom mixture, remaining Brussels sprouts, nutmeg, salt, and pepper.
  9. Simmer for 10 minutes. Stir in parsley before serving.
